People also are not stupid. Nobody is going to want to visit a site that has clearly been thrown together over a weekend with the sole intention of getting you to click on an ad for a cheese grater.

SEO is extremely important to the niche website crowd. They are on a perpetual hunt for backlinks, dream of nothing but keywords, and optimize until they are blue in the face. And just like doing SEO for a blog, doing SEO for niche website is generally a waste of time. Content is king. If you have something people are interested in, they will come. If not, they won’t.
